Sheep produce wool only when butchered, and can not currently be sheared as of experimental game version 0.D-9196-g16728ff. Now in 0.F or later they can be sheared, there are even special shear tools.

They can be milked and produce 2 units of milk (0.5L).

As they don't follow easily your step (like horses or cows may do) and the developers didn't program leading the animal by a leash (the tieing by a short rope just fixes them) you can't transform sheep to your home house place. Ironically their transport by van is thought of.

If your rural home even has a fence around the house: think twice to have lifestock in it. In case a portal storm happens while you are hiding inside the house, the violent attackers might kill your nearby animals.
